MM: Summer Romaine Salad

As we get into warmer weather I’ve been making a lot more salads to get ready for relaxing by the pool in my bikini! I’ve been searching for healthy, but tasty combinations to keep both my taste buds and my waistline happy! After many combinations, I bring you this Summer Romaine Salad! It’s super light with only 223 calories!

Ingredients:

  • 1 large romaine (or salad leaf mix)
  • 1/3 cup cilantro
  • 1 avocado
  • 1 cup cherry tomatoes
  • ½ cucumber
  • ½ red onion
    Dressing:
  • 1/8 – 1/4 tsp pepper
  • 4 tbsp olive oil
  • 1 1/2 – 2 Tbsp lemon juice
  • 1/2 – 3/4 tsp salt

Directions:

  1. Chop romaine and cilantro. Slice onion, avocado and cucumber. Half Tomatoes. Mix.
  2. Combine olive oil, lemon juice, salt, and pepper and drizzle over salad.
  3. Enjoy!
