The hubby’s birthday is tomorrow (woot!) and he requested a cookie cake for his birthday dessert, so here is my go to cookie recipe! I absolutely love this one. It makes delicious, fluffy cookies. I found this recipe on the back of a Crisco vegetable shortening packaging and then made a few tweaks!
1 1/4 cups firmly packed light brown sugar
3/4 cup vegetable shortening
2 tablespoons milk
1 1/4 teaspoon vanilla extract
1 large egg
1 3/4 cups flour
1 teaspoon baking soda
1 cup chocolate chips
1. Heat the oven to 375 F.
2. Combine brown sugar, shortening, milk, and vanilla in a large bowl. Beat at medium speed until light and fluffy.
3. Beat egg into mixture until creamed.
4. Combine flour (lightly pack when measuring), salt, and baking soda in a separate bowl. Stir into creamed mixture until just blended.
5. Add chocolate chips.
6. Place dough into an ungreased cake pan, smoothing out with a rolling pin if necessary. Bake for 15-20 minutes or until golden brown.
This recipe will make a great cookie cake or three dozen cookies! If you’re making cookies, only bake for 8-10 minutes. I will post pictures of the cookie cake soon! I haven’t finished it yet! (oops! >.<)
