I hope many of you are enjoying a long weekend today! Unfortunately, mine ended yesterday, but it was a really nice weekend of relaxing and spending time with friends! We watched three movies on Sunday! It was awesome. And on Saturday we went to see my grandmother for the day. It was great to see her and chat and Atka had an amazing time running around like a crazy pup!
Anyway, here is today’s recipe! As many of you know, the hubby is trying to get back on the health train, so this week we have a fish recipe! I recently discovered the joys of cooked dijon mustard. Talk about delicious. And it’s amazing in this recipe! It only takes 25 minutes and is less than 350 calories!
3 tablespoons Dijon mustard
1 tablespoon honey
2 teaspoons chopped fresh dill
2 teaspoons fresh lemon juice
4 (6-ounce) salmon or tilapia fillets
¼ teaspoon pepper
Salt to taste
1. Preheat oven to 400℉.
2. Combine mustard, honey, dill, and juice in a small bowl. Arrange fillets (skin side down) on a foil-lined baking sheet, coated with cooking spray.
3. Sprinkle salt and pepper over fillets and cover with mustard mixture, on top and bottom, spreading evenly.
4. Bake at 400℉ for 17 minutes or until done.
5. While fish is cooking, steam broccoli for 5-7 minutes in a pot with a lid. Add salt to taste.
