Meal Monday: Pesto!

I love pesto. It’s great on a sandwich, on chicken, or on bruschetta! It has such a delicious and light flavor that melts on the tongue. I always thought it would be kinda tricky to make, but, as it turns out, pesto is just about the easiest thing to make ever! With just five  ingredients, it’s hard to mess up.

 

Basil pesto is my favorite, but I have a TON of arugula in my garden still, so I decided to make arugula pesto. Do be warned, arugula pesto is not for you if you don’t like arugula a LOT!!! I’m not the biggest fan, so didn’t like the arugula pesto very much. I did the same recipe with basil and LOVED it!! So it’s all about your preferences. Know that you can switch in just about any leafy green! I plan to try it with half basil and half spinach so it has some extra veggie in it, but still the amazing flavor of basil pesto.

 

 

Prep and Cook Time:
5 minutes

 

Ingredients:
  • 3 ½ cups basil, spinach, or arugula (or whatever you’d like to use!)
  • ½ – ⅔ cup olive oil
  • ½ cup parmesan cheese
  • 2 Tbsp. garlic
  • Salt and pepper to taste


Directions:

  1. Mix the green (basil, spinach, arugula, etc.), parmesan cheese, garlic, salt and pepper in a blender and give it a rough chop.
 
 
  1. Slowly add the olive oil while you pulse the pesto in the blender. Continue to add olive oil while pulsing until you reach your desired consistency.
 

 

Tips:
  • You can make the pesto and then put it in an ice tray for an easy way to save the leftovers. Plus, one ice cube is about one serving!
 
  • Add olive oil slowly! You can always add more, but you can’t take it out!
